Ingredients:

  • 1 1/2 cups dried chickpeas (soaked overnight)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 3-4 tbsp all-purpose flour
  • Oil for frying

Instructions:

  1. Prepare Chickpeas: Drain and rinse the soaked chickpeas.
  2. Process Ingredients: In a food processor, combine chickpeas, onion, garlic, parsley, and cilantro. Pulse until the mixture is well combined but still slightly coarse.
  3. Season and Mix: Transfer mixture to a bowl. Add cumin, coriander, salt, baking powder, black pepper, and cayenne pepper (if using). Stir in flour, starting with 3 tablespoons. The mixture should hold together when pressed. Add more flour if needed.
  4. Shape Falafels: Using your hands, form the mixture into small balls or patties.
  5. Fry: Heat oil in a deep pan over medium-high heat. Fry falafels in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
