The Authentic Falafel Recipe

Ingredients:
- 1 1/2 cups dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 3-4 tbsp all-purpose flour
- Oil for frying
Instructions:
- Prepare Chickpeas: Drain and rinse the soaked chickpeas.
- Process Ingredients: In a food processor, combine chickpeas, onion, garlic, parsley, and cilantro. Pulse until the mixture is well combined but still slightly coarse.
- Season and Mix: Transfer mixture to a bowl. Add cumin, coriander, salt, baking powder, black pepper, and cayenne pepper (if using). Stir in flour, starting with 3 tablespoons. The mixture should hold together when pressed. Add more flour if needed.
- Shape Falafels: Using your hands, form the mixture into small balls or patties.
- Fry: Heat oil in a deep pan over medium-high heat. Fry falafels in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
